Winemaking notes
In steel tanks, maceration with the skins lasts from 15 to 18 days, utilizing a gentle "shower" system to wet the cap, maintaining a temperature between 31°C and 27°C. Aging for a minimum of 3 years occurs, with an initial period of 18 to 24 months spent in average-sized oak casks before further refinement in the bottle.
Viticultural notes
The soil, rich in calcareous marl clay from the Tortonian period, with 12% active limestone and a basic Ph, showcases a significant presence of microelements like magnesium and manganese, cultivated using the Guyot method, and harvested manually after a summer thinning of excess grape bunches.
Tasting notes
The wine exhibits a garnet color with brilliant luminous hues on the nose, offering an inviting complexity with notes of rose petals, juniper berries, and fine spices, while boasting an ample taste with a silky texture of tannins that showcase surprising harmony at 4/5 years from the harvest, along with remarkable elegance and persistence.
Pairing notes
Fettucini with porcini, Barolo brased pidgeon, well-matured cheeses
