Winemaking notes
Minimal intervention for the vinification in order to preserve the freshness and concentration of the grapes. The must ferments for a period of 20 days in steel vats at a temperature of 13°C. The wine is aged on lees for 3 months. It is refined and filtered.
Viticultural notes
The grapes are selected from the vineyards of the Agter-Paarl region. The vines are not irrigated and produce concentrated, flavorful grapes. Half of the vines are over 25 years old and come from Malmesbury schist soils, which lend minerality and fresh acidity to the wines.
Tasting notes
Vibrant aromas of apple and quince. The wine is fresh with notes of lemon and grapefruit. The wine is well supported by good acidity and a nice mineral frame.
Pairing notes
Serve as an aperitif, with seafood, salads and poultry.
