Winemaking notes
Grapes are gravity-fed to preserve quality. A slow, gentle pressing is followed by cold settling. The first fermentation occurs in stainless steel tanks, keeping grape varieties and soil types separate before blending. The second fermentation in the bottle is followed by 18 months of aging on lees, enhancing finesse and complexity. Extra Brut dosage is made with an organic expedition liqueur.
Viticultural notes
Biodynamic viticulture promotes biodiversity with natural ground cover and compost from estate animals. Short goblet pruning helps regulate vine vigor. Plant infusions reduce copper and sulfur use. The grapevine moth is controlled through sexual confusion. Manual harvesting ensures optimal berry ripeness, preserving fruit quality and expression.
Tasting notes
Pale and elegant color with subtle pink reflections. The nose reveals delicate aromas of red fruits, citrus, and white flowers. On the palate, a lively acidity brings freshness, balanced by a silky texture. The fine bubbles enhance the wine’s complexity, leading to a long, mineral finish, marked by the depth and refinement gained from aging on lees.
Pairing notes
Serve between 8 and 10°C to maintain freshness and highlight aromatic complexity. Perfect as an aperitif or paired with seafood, sushi, white meats, and aged cheeses.
