Ce vermouth est un assemblage de Très Vieux Sherry Oloroso et de Moscatel, apportant une touche d’agrumes distincte. Après une macération hydro-alcoolique avec des extraits amers d’armoise, coriandre, sureau, gentiane, fleurs de camomille, clous de girofle, cannelle, oranges de Séville et baies de genièvre, il est élevé en fûts ayant contenu des vins de Valdespino Oloroso. Ce processus crée un vermouth complexe, aromatique et parfaitement équilibré.
Viticultural notes
The vermouth combines the mature character of Oloroso Sherry from Jerez with the freshness and citrus notes of Moscatel. The botanicals—mugwort, coriander, gentian, and others—are carefully macerated to create a unique aromatic profile. Aging in Oloroso wine barrels adds depth and exceptional complexity, making this vermouth a signature aperitif.
Tasting notes
It has a bright mahogany color with coppery reflections. The nose reveals intense spicy aromas, with subtle hints of Oloroso Sherry. On the palate, it offers fresh citrus notes, mainly orange, complemented by a spiced blend of clove and gentian. The finish is warm and slightly sweet, with an elegant bitterness and a wonderful complexity.
Pairing notes
Serve in a tumbler glass over ice, garnished with a slice of grapefruit or orange. It is perfect as an aperitif, paired with nuts, olives, pickles, and fish tapas like anchovies. Its delicate balance of spicy, bitter, and fruity notes makes for a refreshing and flavorful experience.
