Winemaking notes
Hand-harvested with meticulous sorting in the vineyard and cellar, the grapes undergo whole-cluster maceration in stainless steel tanks for up to two weeks. A gentle pressing is adapted to the vintage and terroir. Fermentation occurs with indigenous yeasts. The wine is aged for six months in concrete tanks and old foudres. Bottled by gravity, without fining or filtration.
Viticultural notes
Grown on limestone and schist soils, this wine comes from vines aged between 5 and 80 years, cultivated using organic farming, polyculture, and agroforestry. This approach promotes biodiversity and enhances the expression of the terroir.
Tasting notes
Expressive and well-balanced, this wine reveals aromas of white fruits, citrus, and flowers. The palate combines freshness and complexity, with a beautiful mineral tension and a long, lingering finish.
