Winemaking notes
Harvest: Manual in boxes with sorting in the vineyard and in the cellar. Vinification: Delicate pressing and settling at low temperature in stainless steel vats. Indigenous yeasts. Without enzymation, without chaptalization, without acidification, without fining or filtration. Ageing: 15 months on the lees (80% in old casks and 20% in new 500L barrels) and refined for 9 months in the bottle.

Soils: Schist and limestone Vines: 60 to 110 years old
Tasting notes
Complex and deep, the nose evokes a bouquet of citrus fruits then of fresh liquorice well melted in a very fine woodiness. The mouth, as round as it is straight, offers a round-chiseled texture as well as a finish on fine bitterness. A great white from Roussillon.
Pairing notes
Grilled shrimp skewers brushed with lemon oil and fresh coriander leaves.
