Winemaking notes
The grapes are harvested by hand. After rigorous sorting and careful de-stemming, the grapes are crushed before undergoing a long fermentation lasting around a month. This stage takes place in 50 hectoliter vats, and in foudres for 50% of production. Once the malolactic fermentation is complete, the wine is precisely blended to enhance its balance and complexity.
Viticultural notes
Produced from a vineyard of old vines averaging 50 years of age, this wine benefits from an exceptional terroir composed of stony terraces resting on clay, sand and saffron. The Mediterranean climate, with its hot summers and cool nights, ensures optimal ripening of the grapes. Careful vineyard management and limited yields guarantee remarkable concentration and aromatic expression.
Tasting notes
Vacqueyras seduces with its aromatic intensity and depth. On the nose, it reveals bewitching aromas of ripe black fruits, sweet spices and garrigue. On the palate, its powerful structure is supported by silky tannins and freshness. The finish is long and elegant, marked by notes of licorice and black pepper, promising great ageing potential.
Pairing notes
This Vacqueyras is best enjoyed between 16 and 18°C to appreciate its full aromatic complexity. A one-hour aeration in a carafe before serving is recommended to fully release its aromas. It is the perfect accompaniment to characterful dishes such as leg of lamb with herbs, grilled fillet of beef or a spicy tajine. Its ageing potential also means it can be cellared for several years.
