Winemaking notes
Vinification: the grapes are handpicked and moved to the winery, where they are de-stemmed. After that, they are cooled down at about 5°C for 48-72 hours and put in stainless steel tanks. Alcoholic fermentation then begins and lasts for 12-13 days at 22-23°C. During maceration, the “cap of marc” is moved as less as possible, in order to obtain a very soft wine. Fining in stainless steel tanks and American oak barrels for 4-6 months.
