Winemaking notes
Hand-picking ensures that the grapes arrive at the winery in perfect condition. A pneumatic press extracts the juice with gentle, even pressure. The must is cold settled before the natural yeasts of the grape begin alcoholic fermentation. This lasts a fortnight, releasing all the fruit aromas, and revealing the beautiful minerality of the terroir.
Viticultural notes
Very attached to the authenticity of Sancerre terroirs and respect for the environment, the Bourgeois family has opted for organic farming to work the vines for this Pure cuvée. Yields and vigor are controlled, grass is planted between the rows, organic fertilizers are used, and inputs are limited to ensure that the grapes reach perfect ripeness.
Tasting notes
The color is pale yellow with silver highlights. The wine is crystal-clear and limpid. The nose expresses beautiful white flowers and ripe yellow-fleshed fruit with a hint of angelica (candied fruit). On the palate, freshness is expressive and well-balanced. The minerality of the flint comes through with a slight smokiness on the palate. Pure develops superb fullness and astonishing generosity.
Pairing notes
This wine goes perfectly with white-fleshed fish, noble shellfish such as lobster papillotes with three citrus fruits, or scallop carpaccio.
