Winemaking notes
Alcoholic fermentation for 4 weeks, 1/3 in stainless steel tanks and 2/3 in oak demi-muids. Aged for 12 months on fine lees in stainless steel tanks, with stirring of the lees until Christmas. The wine is then left to rest in vats for 8 months until bottling, without fining or filtration.
Viticultural notes
The vineyard was planted in 1989 on the Kimmeridgian marls of “Maimbray”, located northwest of Sancerre, near the village of Sury-en-Vaux. The grapes come exclusively from this 1ha 23 parcel.
Tasting notes
The nose is expressive and greedy, with notes of very ripe white fruit (baked pear, vanilla bean). The attack is supple on the palate, before rounding out and gaining in power and amplitude. Finely chiseled acidity supports the wine throughout its length. The very pleasant finish is slightly chalky. A tactile, gourmet wine.
Pairing notes
This precise, fruity parcel marries perfectly with white meats, fish and mature or roasted cheeses.
