Winemaking notes
The grapes are hand-harvested, with careful sorting at the cellar. After full destemming, they macerate for 2 to 3 weeks. Fermentation occurs naturally with indigenous yeasts, without the addition of enzymes, sugar, or acid. The wine undergoes 10 months of aging, with 20% in barrels and 80% in tanks, allowing for slow and balanced maturation.
Viticultural notes
The estate benefits from unique soils of limestone, clay-limestone, and schist, giving the wines great purity and a distinct regional expression. The vines are cultivated using environmentally respectful methods, allowing the natural expression of both the grape and the terroir.
Tasting notes
The wine presents an expressive nose, blending dark fruit, spices, and mineral notes. The palate is smooth, fresh, and rich with a beautiful tension, leading to a long, refreshing finish with fruity and slightly spicy flavors. It’s an elegant, complex, and perfectly balanced wine.
Pairing notes
Serve the wine ideally between 16-18°C, with 30 minutes of aeration to reveal its full complexity. It pairs wonderfully with grilled meats, tagines, or aged cheeses. Its freshness and smoothness also make it an excellent choice for convivial meals.
