Winemaking notes
The 2021 Barbaresco is made from Nebbiolo grapes grown in the Faset vineyard, located on the hills of Barbaresco. Fermentation lasts 17 to 18 days with the skins in 55hl oak vats, using a gentle "shower" system to wet the cap at temperatures between 30°C and 27°C. Malolactic fermentation takes place in vats, followed by 18 months of aging in large casks and a minimum of 2 years of bottle refinement.
Viticultural notes
The 2021 vintage was characterized by varied climatic conditions: a cold, wet spring followed by a hot, dry summer, though not excessively so. The grapes ripened slowly, ensuring a late harvest of healthy, perfectly ripe fruit. Yields were reduced by summer thinning, resulting in an exceptional quality harvest despite the climatic fluctuations.
Tasting notes
The wine has a deep garnet color with brilliant hues. The nose is ample and aristocratic, with notes of dried rose petals, small red fruits, and an elegant mineral hint, complemented by fine spices. On the palate, it boasts great structure, elegance, and a dense texture of fine tannins, with marked minerality and beautiful balance.
Pairing notes
Serve at 18°C to fully appreciate its aromatic complexity and tannic structure. This Barbaresco pairs beautifully with wild rabbit with juniper berries, roasted pheasant, agnolotti with roasted sauce, or well-aged cheeses. Available in 0.75 l and 1.5 l bottles.
