Winemaking notes
Vinification is carried out partly in stainless steel tanks and partly in small barrels at 17°C for three weeks. Maturation lasts approximately one year, with the wine spending time on fine lees both in stainless steel tanks and small barrels. Refinement continues for 12 months on the lees in stainless steel and oak. This wine is exclusively produced during exceptional vintages characterized by ideal climatic conditions and has a potential for longevity of at least 7-8 years.
Viticultural notes
The soil is dark, clayey-calcareous with layers of pebbles, and rich in iron. Yield management involves thinning out excess bunches in the summer, leaving 5-6 bunches per vine. The harvest is done manually, typically between September 18th and 22nd.
Tasting notes
The color is a bright straw yellow with golden reflections. The nose is intense and complex, featuring distinct floral notes and scents of grapefruit, anise, and acacia honey, with an elegant mineral finish. The taste is rich and enveloping, characterized by great balance, length, and an elegant finish, revealing a distinct appeal thanks to its remarkable freshness and sapidity.
Pairing notes
Sea bass in salt, trofie pasta with pesto, stewed rabbit, roast beef
